Goce is wheat with its husk removed by pounding and then coarsely cracked. Unlike bulgur, it is not precooked, so it takes much longer to cook and absorbs more water. In Adiyaman, it is cooked with meat broth, onion, and simple seasonings. The pilaf is ready when the grains still have a slight bite; if cooked until they fall apart, the goce turns mushy.

How to make it?

Rinse the goce

Drain the soaked goce, rinse it one more time in plenty of water, and leave it in a strainer.

Sauté the onion

Melt the butter in a pot and sauté the finely chopped onion for 5 minutes, until soft. Add the tomato paste and cook for 1 minute.

Toast the goce

Add the goce and stir for 3 minutes, until the grains are coated with fat.

Cook the pilaf

Add the hot meat broth and salt; measure by volume, using three measures of liquid for every one measure of goce. Once it boils, reduce the heat, cover, and cook for 50–55 minutes, until the liquid is absorbed and the grains are tender to the bite. If the liquid runs out too soon, add half of a 200 ml measure of hot water.

Reminder

Rinse the goce well and soak it in lukewarm water for 1 hour. After cooking, remove the pilaf from the heat, place a cloth under the lid, and let it rest for 15 minutes; unsoaked goce will not soften even after an hour of cooking. Göceyi kavurma adımını kısa tutmayın, kavrulmayan göce pilavda birbirine yapışıyor. Tereyağında taneler parlayıp hafif renk alana kadar çevirdim, yaklaşık beş dakika sürdü ve tencerenin sesi de değişti.

Demlenmeye bıraktığımda kapağın altına bez koydum, buhar geri damlamadı. Göce bulgurdan daha çok su tuttuğu için bu damlalar pilavın üstünü ıslatıp yapışkan yapıyordu, bez koyduktan sonra üst kat da tane tane kaldı.

Su ölçüsünü bir buçuk katına çıkardım, benim göce iriydi ve tarifteki ölçüde diri kaldı. Suyu da tek seferde değil, iki taksitte ekledim; ilk su çekilince tadıp karar vermek fazla su koyup pilavı dağıtmaktan iyi.

Göcenin dövülme kalınlığı yöreye göre değişiyor, su ölçüsünü ona göre ayarlamak doğru. Kapağı açmadan önce bir tane alıp dişleyin, diriyse yarım çay bardağı sıcak su ekleyip on dakika daha demleyin.

Et suyu yerine sade su kullandım, pilav düz kaldı. Et suyu bu tarifte baharat yerine geçiyormuş, ikinci sefer kemikli kuzudan çektiğim suyla yaptım ve aynı malzemelerle bambaşka bir pilav çıktı.

Salçayı soğanla birlikte kavurmak yerine soğan pembeleşince ekledim, yanma riski azaldı. Salça yanınca pilavın tamamı acı bir tat alıyor ve geri dönüşü yok, bu yüzden ateşi de kısıp iki dakikayı geçirmedim.

Göceyi yıkarken suyun berraklaşmasını bekledim, dört su gitti. Yıkanmamış göce pilavı yapış yapış yapıyor. Yıkadıktan sonra süzgeçte yirmi dakika beklettim, ıslak göceyi doğrudan tereyağına atınca yağ sıçrıyor ve kavurma yerine buğulama oluyor. Adıyaman'da bu işi akşamdan yapıp gecelik bırakıyorlar, sabah göce hem kurumuş hem hafif şişmiş oluyor ve kavrulurken tanesi daha çabuk parlıyor.
