Mash the white cheese with a fork and mix it with the finely chopped parsley. If the cheese is salty, do not add extra salt to the filling.
Divide the rested dough into portions and roll each one out thinly with a rolling pin. Spread the cheese filling over one half, then fold over the other half or fold it into a triangle.
Cook the flatbreads on a hot griddle or in a wide skillet over medium heat, until browned on both sides. Brush with a little butter and serve hot.
