Inspired by the olive oil traditions of the Greek islands, these cookies use olive oil and whole-wheat flour in place of a conventional cookie mixture. Orange juice and zest brighten the dough, which can be shaped and baked straight away without resting.

How to make it?

Mix the wet ingredients

Whisk the olive oil, sugar, orange juice and orange zest in a bowl until smooth.

Mix and shape the dough

Add the whole-wheat flour, cinnamon, baking powder and salt to the wet mixture and mix to form a soft dough. Lightly flour your hands, pinch off pieces about 3 centimeters across, flatten them gently and arrange on a baking pan.

Bake

10 min

Bake in an oven preheated to 190°C / 375°F until the undersides begin to darken slightly.

Reminder

This dough is softer and oilier than most cookie doughs. Lightly flour your hands before shaping it, or it will stick to your fingers. Allergen: contains wheat (gluten).

Hamur tarifte belirtilenden çok daha yağlı çıktı, yaklaşık 3 santimetrelik toplar hiç tutmadı ve tepsiye koyduğumda hemen yayılıp yan yana duran parçalar birbirine karıştı; ikinci denemede unu azar azar artırarak toparlamayı başardım.

Zeytinyağı markadan markaya yoğunluk farkı gösterebiliyor, bu yüzden hamur çok akıcı gelirse bir-iki yemek kaşığı un daha ekleyip toparlayabilirsiniz. Ellerinizi unlamak da yapışmayı büyük ölçüde azaltır.

Tarifte yazan 10 dakika yetmedi, benim fırınımda 16 dakika sürdü ve o sürede kenarları neredeyse yanmıştı; alt-üst ateş dengesiz olan fırınlar için bu süre riskli.
