This egg dish, served at barbecue tables on the Greek islands, is made by pouring beaten eggs over onions and spinach sautéed together, then slowly cooking it covered in a cast-iron pot. Feta is mixed into the eggs, resulting in a thick omelet with a puffed top.

Prepare the Embers

Light the barbecue embers and wait 30 minutes, until they reach a medium glow suitable for cooking.

Sauté the Spinach

10 min

In a cast-iron pot, sauté the finely chopped onion in olive oil for 5 minutes. Add the spinach and fresh thyme, then sauté for 5 more minutes, until tender.

Pour in the Eggs and Cook Covered

20 min

Beat the eggs with the crumbled feta, salt, and black pepper, then pour the mixture over the spinach. Cover the pot and cook slowly near the embers for 20 minutes, until the center puffs up.

Slice and Serve

Remove from the heat, let rest for 5 minutes, then serve hot in slices.

Reminder

Important: Avoid lifting the lid frequently, or the omelet may collapse in the middle. Allergens: contains eggs and milk (feta).

Közü tarifte dendiği gibi 30 dakika bekleyip orta parlaklığa getirdim, kapağı kapalı tutunca omlet gerçekten kabararak pişti. Feta peynirini yumurtaya karıştırmak tuzluluğu mükemmel dengeledi, ıspanağın da fazla suyunu bırakmaması güzel bir sürpriz oldu benim için.
