A hearty soup from Anatolian home cooking, this dish combines green lentils with whole-grain vermicelli for a filling yet light meal. Adding the vermicelli at the end keeps it from overcooking and becoming mushy.

How to make it?

Sauté the Vegetables

Sauté the onion and carrot in olive oil for 5 minutes.

Add the Tomato Paste

Add the tomato paste and cumin and sauté for another 2 minutes.

Cook the Lentils

15 min

Add the green lentils, water, and salt. Bring to a boil, then simmer over low heat for 15 minutes.

Add the Vermicelli

10 min

Add the vermicelli and cook for another 10 minutes.

Reminder

Add the vermicelli during the last 10 minutes of cooking. If added earlier, it may overcook and become mushy. Allergen: wheat (gluten, vermicelli).
