Prepare the papaya
10 minPeel the green papaya and grate it into thin strips or cut it into julienne strips.
A famous, refreshing Thai salad made with shredded green papaya tossed with carrots, peanuts, lemon, and fresh chile. Its sour, sweet, and spicy balance makes it a light starter alongside main dishes.
Peel the green papaya and grate it into thin strips or cut it into julienne strips.
Mix the lemon juice, fish sauce, sugar, and crushed garlic to make the dressing.
In a large bowl, toss the shredded papaya, carrot, tomato, and fresh chile with the dressing. If you like, lightly pound them in a mortar.
Transfer the salad to a serving plate, sprinkle with crushed peanuts, and serve immediately.
Important: Use firm, unripe green papaya; this recipe will not work with ripe papaya. Adjust the amount of fresh chile to taste, as too much can throw off the salad’s balance.
