How to make it?

Clean the Liver

Remove the membranes and thin veins from the lamb liver, then slice it about 0.5 cm thick.

Marinate

Mix the strained yogurt, crushed garlic, cumin, red pepper flakes, olive oil, and salt. Spread the mixture over the liver slices.

Chill

45 min

Refrigerate the marinated liver for 45 minutes; this time is needed for flavor and to reduce its odor.

Grill Over Hot Coals

Grill the liver slices over glowing coals for about 1.5–2 minutes per side, about 4 minutes total.

Reminder

Do not grill the liver for more than 3–4 minutes; longer cooking makes it tough and rubbery. Contains dairy (yogurt).

Süzme yoğurt bulamadığım için labne ile marine ettim, kıvamı daha yoğun olduğu için ciğere daha iyi yapıştı ve pişince dışı daha güzel karamelize oldu. Bir dahaki sefere de labne kullanacağım.

Labne fikri güzel, süzme yoğurttan daha az su bıraktığı için marinasyon gerçekten daha iyi tutunuyor olmalı. Notu güncelleyip labne alternatifini de ekleyeceğim.
