Prepare the vegetables

Zucchini, red bell pepper, button mushrooms, and cherry tomatoes are marinated in olive oil and thyme, then grilled over charcoal. These colorful skewers make an easy appetizer for parties and celebrations.
Cut the zucchini and red bell pepper into 2-centimeter pieces. Remove the stems from the button mushrooms.
Mix the olive oil, thyme, salt, and black pepper in a bowl. Add the chopped vegetables and cherry tomatoes and let marinate for 15 minutes.
Thread the vegetables and cherry tomatoes onto skewers in alternating order.
Place the skewers over the medium-hot coals, turning occasionally, and grill until the edges are lightly charred.
Leave small gaps between the vegetables on the skewers; if packed tightly, the pieces in the middle may stay raw. Let them marinate for at least 15 minutes before cooking so the flavor has time to soak in.
