Pizza and Turkish flatbreads
Born in Halifax in the 1970s, donair is known for ground beef seasoned with cinnamon and cumin and served with a sweet garlic sauce. In this pizza version, the same filling is spread over thin dough. It is a favorite at gatherings in Nova Scotia.
Knead the flour, fresh yeast, salt, olive oil, and lukewarm water into a smooth dough, then let it rise.
Mix the ground beef with the cinnamon, cumin, black pepper, and salt. Cook in a nonstick skillet until the liquid is released and evaporates.
Bring the granulated sugar, vinegar, garlic powder, and a few tablespoons of water to a boil in a small saucepan. Cook until thickened.
Roll the dough into a thin circle and cover it with tomato sauce. Top with mozzarella, cooked donair filling, tomato, and onion.
Bake in an oven preheated to 230°C / 445°F, until the edges bubble and turn deep golden brown. Drizzle with the sweet garlic sauce to serve.
