Afyon-style poppy seed rolls are made by cooking ground poppy seeds with milk, spreading the filling over yeasted dough, then rolling and slicing it. Cooking the seeds briefly with milk releases their oil and keeps the filling from crumbling. A well-made roll has a distinct dark gray spiral when sliced.

Knead the dough

Stir the yeast and sugar into the warm milk and let it foam for 5 minutes. Add the melted, cooled butter, egg, salt, and flour, then knead for 10 minutes. Stretch a small piece of dough between your fingers; if it forms a thin membrane without tearing, the gluten has developed. Cover and let rise in a warm place.

Cook the poppy seed filling

Melt the butter in a pan, add the ground poppy seeds, and stir over low heat for 3 minutes until fragrant. Add the sugar and milk and cook for 4 more minutes; a trail drawn through the mixture should remain visible on the bottom of the pan for 1 second. Stir in the cinnamon, remove from the heat, and cool completely.

Roll out, fill, and shape

Divide the risen dough in half and roll each piece into a rectangle 40 centimeters long. Spread the cooled filling evenly, leaving a two-finger-width border along one edge. Starting from a long side, roll up tightly and press the unfilled edge underneath to seal. A loose roll will not show a clear spiral when sliced.

Slice and arrange

Use a sharp knife to cut the rolls into 3-centimeter-thick slices, drawing the blade back and forth without pressing down; pressing will flatten the spiral. Arrange the slices, cut side up and spaced apart, on a parchment-lined baking sheet. Brush with egg yolk and sprinkle with sesame seeds.

Bake

30 min

Bake in a preheated 180°C / 355°F oven for 30 minutes. The rolls are done when the tops are deep golden brown and the bottoms lift easily from the pan. Let cool slightly on a wire rack before serving; the centers may look sticky while hot but will set as they cool.

Reminder

Let the dough rise until doubled, about 90 minutes, then let the slices rise on the baking sheet for another 20 minutes. These times are not included in the recipe’s total time.
