This Black Sea dessert is made by roasting and rubbing the skins off hazelnuts, then blending them with milk and stirring the mixture into the pudding. The thin skin beneath the shell is bitter and its flavor carries into the dessert; roasting is done to loosen the skin, not just for aroma. The hazelnut oil makes this pudding noticeably richer than the classic version.

Roast and skin the hazelnuts

Toast the hazelnuts in a dry skillet over medium heat, shaking constantly, for 5 minutes; they are ready when the skins begin to crack and lift. Put the hot hazelnuts in a clean towel and rub them between your palms to remove the skins. Discard any nuts that still have their skins, as they will make the dessert bitter.

Blend with milk

Blend the skinned hazelnuts with 300 ml of the milk for 3 minutes, until smooth. Do not blend them dry; they will release their oil and turn into a paste that creates an oily layer in the pudding.

Whisk the starch

Whisk the starch with 200 ml of the milk until no lumps remain, then strain it.

Bring to a boil and cook

Bring the remaining milk and sugar to a boil, add the hazelnut mixture, and stir for 3 minutes. Pour in the dissolved starch in a thin stream while stirring constantly, then reduce the heat and stir for 9 minutes, scraping the bottom. Remove from the heat when the mixture coats the spoon.

Pour into bowls

Stir the pudding once more, divide it among bowls, and smooth the surfaces with the back of a wet spoon. Let it cool uncovered; sprinkle with crushed hazelnuts when serving.

Reminder

Chill the pudding in the refrigerator for at least 3 hours after portioning; this time is not included in the recipe duration. Hazelnut oil may rise to the surface as it cools, so stir the mixture once more before filling the bowls.

Fındığı kavurup zarını almak şart. Zarlı çektim ve muhallebi hem buruk hem benekli oldu. Fındığı sütle birlikte çekerken süt ılık olmalı, soğuk sütle çektiğimde fındığın yağı açılmadı ve tat zayıf kaldı.
