Grated carrot and zucchini are mixed into the ground beef and hidden in the meatballs, making this recipe an easy way to help children eat vegetables. Freezing the meatballs before cooking helps them hold their shape and keeps them from falling apart in the oven.

Drain the Vegetables

Squeeze the moisture from the grated carrot, zucchini, and onion.

Shape the mixture into small meatballs.

Freeze

Arrange the meatballs on a tray and freeze for 60 minutes, until firm.

Bake the meatballs in an oven preheated to 190°C / 375°F for 25 minutes, turning them occasionally, until browned all over.

Reminder

Squeeze the grated vegetables very well, or the meat mixture will be too loose to shape. If you skip freezing, the meatballs may fall apart in the oven. Allergens: contains wheat (gluten) and egg.
