A centerpiece of Ethiopian holiday and wedding tables, himbasha is made from yeasted dough flavored with cardamom and cloves, decorated with a pattern scored on top with a knife, and baked. In Ethiopian homes, leftover slices are often toasted and drizzled with honey for breakfast the next day.

How to make it?

Knead the dough

In a bowl, combine the flour, granulated sugar, instant dry yeast, cardamom, cloves, and salt. Add the warm water and sunflower oil, then knead into an elastic dough. Let rise for 40 minutes.

Shape and decorate

20 min

Shape the risen dough into a round loaf and place it on a greased baking sheet. Lightly score a radial pattern on top with a knife, then let it rise for 20 more minutes.

Bake

35 min

Bake in an oven preheated to 180°C / 355°F for 35 minutes, until deep golden on top.

Reminder

Cover the dough with a damp towel while it rises, or the surface may dry out and crack. Allergen: contains wheat (gluten).
