In a bowl, mix the sugar, cornstarch and cocoa powder until no lumps remain.
Whisk a small amount of cold milk into the dry mixture to make a smooth slurry with no lumps. Add the remaining milk.
Transfer the mixture to a pot and cook over low heat, stirring constantly, until it comes to a boil and thickens.
Stir in the vanilla and divide the pudding among bowls. Cover with plastic wrap and refrigerate for at least 2 hours.
Important: Stir constantly as you add the cornstarch to the milk to prevent lumps from forming on the bottom of the pot. Allergen: contains milk and dairy. Store in a covered container in the refrigerator for up to 3 days.
