Raw hazelnut kernels are roasted, rubbed to remove their skins, then processed until their natural oils turn them into a spread. There is no added sugar, milk powder, or palm oil; the texture depends almost entirely on processing time. As the food processor warms the nuts, their oil is released and the sandy mixture suddenly becomes fluid.

Roast the hazelnuts

Spread the hazelnuts in a single layer on a dry baking sheet and roast for 12 minutes in an oven preheated to 150°C / 300°F. The temperature is intentionally low: above 180°C / 355°F, the skins burn before the hazelnut centers roast, giving the spread a bitter flavor. Shake the baking sheet at the seventh-minute mark. Remove the nuts when their skins split and they turn cinnamon-brown.

Rub off the skins

Pour the hot hazelnuts into the center of a clean kitchen towel, gather the towel, and rub the nuts between your palms for 30 seconds. Most of the skins will come off onto the towel. They do not all need to come off; any remaining bits leave dark flecks in the spread but do not affect the flavor. Spread the nuts on a wide plate and let them cool until just warm to the touch.

Process the hazelnuts

Put the hazelnuts in a food processor and run it. The mixture passes through three stages: coarse crumbs, then sandy particles clinging to the sides, and finally a glossy, fluid spread. Every 2 minutes, stop the processor, scrape down the sides with a spatula, and let the motor cool. If the mixture is still sandy after the twelfth minute—nuts from a dry growing season yield less oil—add one 5 ml measure of sunflower oil and process for 1 more minute. It is ready when it falls from a spoon in a thick ribbon.

Season and jar the spread

Add the salt and vanilla powder, then process for 20 seconds. Transfer the spread to a clean glass jar that has been rinsed with boiling water and dried. Press down with the back of a spoon to remove air pockets. Close the lid only after the spread has cooled to lukewarm; condensation on a jar sealed while hot can drip into the spread.

🔴 Hazelnuts are a common allergen. If anyone in your household has a tree nut allergy, do not make this recipe; use the sunflower seed version instead. Do not give whole or chopped hazelnuts to young children. Serve only as a spread, applied in a layer no thicker than 2 mm on bread; a thick layer of dense spread can stick to the roof of the mouth. Let the roasted hazelnuts cool until just warm to the touch before processing; this cooling time is not included in the recipe time.
