These thin, crisp breadsticks are made from yeasted dough enriched with grated kashar cheese, a Turkish semi-hard cheese. A classic Italian snack, they pair well with soups and appetizers.
Add the sugar and yeast to the lukewarm water and let it foam for 10 minutes.
Mix the all-purpose flour, salt, olive oil, and yeast mixture. Knead for 8–10 minutes, until the dough is elastic.
Cover the dough and leave it in a warm place for 45 minutes, until doubled in size.
Roll the dough out very thin, like pastry sheets, and cut it into long strips. Gently stretch each strip by hand to form a thin breadstick. Sprinkle with grated kashar cheese and sesame seeds.
Arrange the breadsticks on a parchment-lined baking sheet and bake in a preheated oven until golden and crisp.
Dust the dough with flour as you roll it thin and stretch it by hand, so it does not tear. Allergens: contains wheat (gluten) and milk. Rising time may be shorter in a warm room and a little longer in a cool kitchen.
