This compote is made by cooking sliced quinces in honey syrup with cloves and a cinnamon stick until tender. Quinces have a firm texture, so they need a longer cooking time than other fruits used in compotes.

Mix the water and honey in a saucepan and bring to a boil. Add the drained quince slices, cloves and cinnamon stick.
Reduce the heat, cover and cook until the quinces are soft enough to pierce with a fork. Remove the cloves and cinnamon stick.
Let the compote come to room temperature, then divide between bowls.
Put the quinces into lemon water as soon as you peel them; otherwise they will quickly brown on contact with the air.

Balla yapılması şekerli hâlinden çok daha yumuşak bir tat verdi bence. Çocuklar bile ekstra istedi.
