Huarache, a Mexican street food, is made by cooking a thick, flat oval of masa dough on a griddle, then topping it with mashed beans, cheese, and fresh vegetables. Its oval shape resembles the sole of a sandal.

How to make it?

Prepare the dough

Knead the masa harina with the salt and lukewarm water until a smooth, moldable dough forms. Let it rest for 10 minutes.

Shape and cook the ovals

15 min

Divide the dough into 4 pieces and shape each one in your hands into a flat oval. Cook on a hot, oiled griddle for 3–4 minutes per side, until lightly puffed and browned with small spots.

Spread on the beans

5 min

Heat the mashed beans in cooking oil for 3 minutes, then spread a thick layer over the cooked bases.

Add the toppings

10 min

Top the bean-covered bases with Kashar cheese, lettuce, tomato, red onion, and chopped green chili pepper. Garnish with cilantro and cream, squeeze lemon over them, and serve.

Reminder

Keep your hands wet while shaping the dough; otherwise, the masa may crack and the edges may break apart. Make sure both sides are browned with small spots before removing the base from the griddle. Contains milk and dairy (Kashar cheese and cream).
