Ijjeh is a hearty Jordanian egg dish made by mixing spinach, scallions, and herbs with eggs and baking them together. It can be sliced and served cold, making it ideal for picnics.
Finely chop the spinach, scallions, parsley, and dill, then combine them in a large bowl.
Beat the eggs and add the flour, salt, black pepper, and cumin. Mix until smooth, then fold in the chopped greens.
Grease a baking pan with olive oil and pour in the mixture. Bake for 30 minutes in an oven preheated to 180°C / 355°F, until the top is lightly golden.
Let the dish rest for 5 minutes after removing it from the oven. Slice and serve.
Grease the baking pan thoroughly before pouring in the mixture; otherwise, the bottom may stick and break apart. Allergen: Contains wheat (gluten) and egg.
