Inspired by Iraq’s date-growing tradition, this puree is made by simmering pitted dates with banana and blending until smooth. Dates provide natural sweetness without added sugar, as well as iron and potassium. This recipe is intended for babies 8 months and older.
Place the pitted dates and water in a small saucepan. Simmer over low heat for 8 minutes, until softened.
Remove the dates from the heat, add the chopped banana, and cook over low heat for 2 more minutes, until the banana softens slightly.
Blend the mixture with its cooking water until completely smooth and free of lumps. Let it cool until lukewarm before serving.
Check the dates carefully for any remaining pit fragments, which can pose a choking hazard. For a smooth texture, blend the mixture with the cooking water, adding it gradually.
