This Iraqi pilaf cooks fresh fava beans with rice, dill, and olive oil, then is topped with almonds toasted in an air fryer. Its reduced-oil preparation makes it a heart-friendly meal, and it can also be eaten cold in a lunchbox.

How to make it?

Toast the Almonds

Arrange the almonds in a single layer in the air fryer basket and toast for 5 minutes, shaking the basket occasionally.

Start the Pilaf

Sauté the onion in olive oil until softened and lightly golden. Add the fava beans and sauté for 5 more minutes.

Add the Rice and Water

18 min

Add the rinsed rice to the pot, then add the hot water and salt. Once it boils, cover and cook over low heat for 18 minutes.

Rest and Serve

10 min

Remove the pilaf from the heat and let it rest for 10 minutes. Sprinkle the toasted almonds and chopped dill over the top and serve.

Reminder

Do not skip rinsing the rice before cooking, or the pilaf may turn sticky. Contains tree nuts (almonds).
