Typical of rural Iraqi cooking, this stew is made by slowly pressure-cooking roasted freekeh and red lentils with onion and cumin. The whole-grain freekeh adds a nutty flavor and a satisfying texture.

Add the drained freekeh and red lentils to the cooker and toast for 1 minute. Stir in the meat stock and salt.
Close the lid and reduce the heat once the pressure cooker starts whistling. Cook for 25 minutes, until the freekeh is thoroughly tender, then let the pressure release naturally.
Soak the freekeh in plenty of water at least 2 hours before starting to cook, then drain. This soaking time helps the whole grain soften evenly, even in a pressure cooker.
