This dessert is made by mixing low-fat yogurt with honey and rosewater, then freezing it into a light ice cream inspired by Iraq’s love of rosewater. With less fat than cream, it is ideal for a crowd looking for a heart-healthy option.

Step by Step

How to make it?

1

Prepare the mixture

10 min

Whisk the yogurt, honey, rosewater, and milk until smooth.

2

Chill

15 min

Chill the mixture in the refrigerator for 15 minutes.

3

Freeze

90 min

Pour the mixture into a wide, shallow container. Freeze for a total of 90 minutes, stirring with a fork every 20 minutes during the first hour.

4

Serve

5 min

Spoon the ice cream into bowls, sprinkle with pistachios, and serve.

Reminder

Add the rosewater a little at a time, tasting as you go; too much can leave a soapy flavor. Stir at regular intervals while freezing to prevent large ice crystals from forming. Allergens: contains dairy (yogurt) and tree nuts (pistachios).
