A favorite Iraqi street food, spiced ground beef is pressed around skewers and cooked quickly in an air fryer with little oil. Cumin and Turkish red pepper flakes bring traditional barbecue flavor into an everyday kitchen.
Knead the ground beef, onion, garlic, cumin, Turkish red pepper flakes, egg, parsley and salt in a bowl until evenly combined.
Cover with plastic wrap and refrigerate for 15 minutes to help the mixture hold together on the skewers.
With wet hands, press the mixture around flat metal skewers in a long, thin layer.
Cook in a preheated air fryer at 200°C / 390°F for 10 minutes, turning halfway through. If you do not have an air fryer, bake the same skewers in an oven preheated to 220°C / 430°F for 15 minutes.
Wet your hands when pressing the mixture around the skewers, or it will stick to your fingers and be difficult to shape. Allergens: this recipe contains no gluten but does contain egg.
