Inspired by Iraqi pickling traditions, this recipe briefly softens small eggplants in a pressure cooker, stuffs them with garlic and red chili, then rests them in a vinegar brine. Because no sweetener is added, the pickles do not affect blood glucose.
Steam the small eggplants in a pressure cooker with a little water for 8 minutes, until the skins are just flexible. Drain and let them cool.
Make a lengthwise slit down the middle of each eggplant. Tuck the thinly sliced garlic and red chili into the opening.
Arrange the stuffed eggplants tightly in clean jars.
Mix the apple cider vinegar, water and salt and bring to a boil. Pour the hot brine into the jars with the bay leaves, covering the eggplants.
Do not soften the eggplants too much in the pressure cooker, or they may tear when stuffed; remove them when the skins are just flexible. Before closing the jar, make sure the brine covers all the eggplants.
