This quick Iraqi-style breakfast uses ready-made lavash brushed with za'atar and olive oil, then topped with white cheese and tomato. Ready in less than fifteen minutes, it is a quick answer to a sudden snack craving.
Mix the za'atar spice blend and olive oil in a small bowl.
Spread the za'atar mixture over the lavash, then top with crumbled white cheese and tomato slices.
Cook in a pan over low heat for three minutes, until the underside is crisp. Fold in half and heat for one more minute.
Serve hot.
Keep the pan from getting too hot: za'atar burns easily and can turn bitter. Allergens: contains gluten (lavash), dairy products (white cheese) and sesame (za'atar).
