This recipe makes Istanbul’s classic street-food simit small enough for children to hold comfortably. The dough is dipped in a grape molasses glaze, coated generously with sesame seeds, and baked until golden and crisp outside while staying soft inside.
Knead the flour with the yeast, salt, and lukewarm water. Cover and let it rise in a warm place.
Pinch off small pieces of the risen dough and roll them into long, thin ropes. Join the ends to make mini rings.
Quickly dip the rings in grape molasses thinned with water, then coat them with sesame seeds right away.
Arrange the rings on a baking sheet lined with parchment paper. Bake in an oven preheated to 200°C / 390°F until golden.
Do not soak the rings in the glaze for too long; overly wet dough may not rise properly in the oven. Contains wheat/gluten and sesame.
