Istanbul’s famous saucy meatballs are made by coating fried meatballs in a tomato and butter sauce. Tender and generously sauced, they make a hearty main dish served hot in a sandwich or on a plate.
Thoroughly knead the ground beef with the bread soaked in water and squeezed dry, grated onion, breadcrumbs, salt, and black pepper.
Shape the mixture into small, flat meatballs. Fry them in hot oil until browned on both sides and drain on paper towels.
Melt the butter, then add the grated tomato and tomato paste. Add the water and simmer over low heat until the sauce thickens.
Add the fried meatballs to the hot sauce and simmer for a few minutes so they absorb it. Serve hot.
Important: Do not let the frying oil get too hot; the meatballs should cook through before the outsides burn. Caution: Melt the butter for the sauce without browning it, or it may taste bitter. Allergen note: the meatball mixture contains breadcrumbs made with wheat (gluten).
