This thin-skinned white bean variety from Erzurum has small kernels and a distinctive flavor, so no tomato paste is added. The only fat is lamb tail fat, and the only vegetable is onion. This simplicity is a choice, not a necessity: the acid in tomato paste can toughen the skin, and the thin skin is what makes this regional bean variety special.

How to make it?

Bring to a boil and skim the foam

Discard the soaking water, cover the beans with 1,500 ml fresh water, and bring to a boil. Boil vigorously, uncovered, for at least 10 minutes. This first full boil is needed to break down the beans’ natural toxin; do not skip it. Skim off the foam from the surface.

Reduce to a simmer

10 min

Lower the heat and leave the lid partially open. The pot should stop boiling vigorously and only tremble gently; a rough boil will split the thin skins and break up the beans.

Render the lamb tail fat

12 min

Finely chop the lamb tail fat and render it in a separate skillet over low heat. Once the cracklings are browned, add the diced onion and cook, stirring, until translucent.

Combine and simmer

50 min

Add the rendered fat and onion to the pot, cover, and cook over low heat for 45 minutes. The dish is ready when the beans can be mashed between your fingers without their skins splitting, and the liquid has thickened with oil rising to the surface.

Add the salt and pepper

Add the salt and black pepper and boil for 3 more minutes. Remove from the heat and let rest, covered, for 10 minutes.

Reminder

Soak the beans in cold water for 8–12 hours overnight and discard the soaking water. Contrary to common belief, acid—not salt—toughens beans. You can add salt halfway through cooking, but add acidic ingredients such as vinegar, lemon, or tomato paste only after the beans soften.

İspir fasulyesi ince kabuklu olduğu için çabuk pişiyor, normal fasulye süresini uygulayınca dağıldı. Köpüğünü alma adımını atlamayın, alınmayan köpük yemeğe hem bulanıklık hem ağır bir tat veriyor.
