Itch is a light starter at Armenian meals, made by soaking fine bulgur in boiling water and mixing it with tomato paste, pomegranate molasses and plenty of parsley. Because it needs no cooking, it is easy to prepare on hot days.

How to make it?

Soften the bulgur

15 min

Put the fine bulgur in a bowl, add enough boiling water to cover it, cover the bowl and leave for 15 minutes.

Make the tomato paste mixture

8 min

Sauté the grated onion, crushed garlic clove and tomato paste in olive oil for 8 minutes.

Mix and rest

10 min

Combine the cooked bulgur with the tomato paste mixture, pomegranate molasses, parsley and salt and knead together thoroughly. Leave to rest for 10 minutes before serving.

Reminder

Drain the bulgur before mixing it in; excess water will make the salad watery. Allergen: contains gluten (bulgur).

Bulguru 15 dakika beklettim ama suyunu süzmeden karıştırınca salata sulu çıktı, çocuklarım ekmeğe bulayamadı. Nar ekşisini de biraz fazla koymuşum, ekşiliği bastırdı; bir dahaki sefere yarım doz ile başlayacağım.
