Izmir bomb pastries are made by wrapping chocolate in a sweet, yeasted dough and baking it until the chocolate melts into a gooey center. There is no syrup or cream topping; all the sweetness comes from the dough and the chocolate inside. Enjoy them warm after baking, because the chocolate firms up again as it cools.

How to make it?

Knead the dough

Combine the flour, sugar, yeast, and salt; do not let the dry salt sit directly next to the yeast. Add the lukewarm milk and eggs and begin kneading. Work in the room-temperature butter a few pieces at a time. After 10 minutes, the dough should be glossy, soft, and slightly sticky.

Divide into portions

Punch down the risen dough, divide it into 12 equal pieces, and roll each into a ball between your palms.

Add the chocolate

Flatten each ball by hand into an 8 cm round. Place a piece of chocolate weighing about 17 g in the center. Gather the edges, pinch them firmly closed, and turn seam-side down. Chocolate will leak out through even the smallest opening.

Arrange on the tray

Arrange the pastries on a parchment-lined baking sheet, leaving about a finger-width of space between them, and cover.

Bake

Brush with beaten egg yolk and bake in an oven preheated to 180°C / 355°F. Remove when the tops turn deep golden; do not bake longer than 18 minutes, or the dough may keep the chocolate from staying gooey. Let cool for 10 minutes before serving.

Reminder

The dough rises twice: for one hour after kneading and for 30 minutes on the tray after shaping. Skipping the second rise will keep the bombs from puffing in the oven and leave the centers dense.
