Leftover boiled vegetables from the fridge, such as potatoes, carrots and zucchini, are quickly sautéed with cumin and tomatoes in this practical, waste-saving dinner. A base of onion and garlic brings their flavors together.
How to make it?
Add the diced zucchini and carrot and sauté for 5 minutes. Add the chopped tomatoes and season with cumin, salt and black pepper.
Stir in the leftover boiled potatoes and cook for another 5 minutes. Remove from the heat before the vegetables become watery.
Reminder
Do not add all the vegetables at once. Add firmer ones first, followed by softer ones, or some may fall apart while others remain undercooked.
