Karakuş, a dessert from Diyarbakır in southeastern Turkey, is made by filling thin, starch-rolled dough with walnuts, frying it, and soaking it in syrup. Because it is deep-fried rather than baked, the layers separate and puff up into delicate sheets; the deep golden surface gives the dessert its name. Using starch instead of flour when rolling is essential: flour sticks the layers together, while starch keeps them separate.

How to make it?

Make and cool the syrup

Bring the sugar and water to a boil and simmer over low heat for 12 minutes. Add the lemon juice before removing it from the heat. Pour the syrup into a wide bowl and let it cool. Cold syrup is especially important for fried desserts: hot syrup will soften the fried dough immediately.

Knead the dough

Mix the flour, salt, egg, milk, and vegetable oil. Knead for 8 minutes, until you have a smooth, nonsticky dough that is slightly firmer than earlobe-soft. Shape it into a ball, cover it with a damp cloth, and let it rest.

Prepare the walnuts

Coarsely crush the walnuts with a knife; do not grind them to a powder, or they will melt into the dough while frying and lose their filling texture. If you like, warm them in a dry pan for 2 minutes to bring out their aroma, then let them cool.

Roll, fill, and fold

Divide the dough into walnut-size portions and roll each one paper-thin, dusting with starch. Stack the sheets, sprinkling plenty of starch between them, then roll the stack out once more. Place walnuts in the center, fold into triangles or half-moons, and press the edges closed with a fork.

Fry and soak in syrup

Heat the oil to 165°C / 330°F; the temperature is right if a small piece of dough sinks and then immediately rises to the surface. Fry the desserts in batches, turning them until both sides are light golden brown. After draining off excess oil on paper towels, dip them in the cold syrup for 1 minute while they are still hot, then transfer them to a strainer.

Reminder

After kneading, cover the dough and let it rest for 30 minutes. Dough that has not rested will spring back when rolled and will not become thin enough. This resting time is not included in the cooking time.
