Karsambaç is a traditional dessert from Eastern Anatolia, made by combining clean winter snow with a thick syrup boiled from grapes. The syrup is prepared and chilled ahead of time, so it freezes instantly when poured over the snow. With few ingredients and simple preparation, it is served in large bowls to share with a crowd.

How to make it?

Boil the syrup

Mix the grape molasses with water in a pot and bring it to a boil over medium heat. Cook for 15 minutes until slightly thickened, then remove it from the heat and add the lemon juice.

Chill the syrup

60 min

Transfer the syrup to a bowl. Once it reaches room temperature, chill it thoroughly in the refrigerator. Keep it refrigerated until just before using it on the snow.

Gather the snow

10 min

Fill clean bowls generously with the top, untrampled layer of freshly fallen snow and prepare to serve immediately.

Pour on the syrup and serve

Drizzle the chilled syrup over the bowls of snow. Sprinkle with chopped walnuts if desired, and serve immediately.

Reminder

Use only the very clean, untrampled snow from the top layer; lower layers may contain dust and dirt. Pour the syrup over the snow just before serving, or the snow will start to melt. Allergen: contains tree nuts (walnuts).

Anneannem hep dut pekmeziyle yapardı, ben üzüm pekmeziyle denedim ve şerbeti 15 dakika yerine 20 dakika kaynattım, kıvam daha koyu çıktı ve kardan sonra da akmadı.
