Katlama is Uzbek street food made by filling yeasted dough with a spiced ground meat mixture, rolling it into layers, and cooking it in a skillet. The uncooked dough can be frozen and cooked when needed.
Dissolve the yeast in lukewarm water. Add the salt and flour and knead into a soft dough. Cover and let it rise for 15 minutes.
Mix the ground meat with the diced onion, cumin, Turkish red pepper flakes, and black pepper.
Roll out the risen dough, brush the surface with cooking oil, spread the filling on top, then roll it up and coil it to create layers.
Flatten the coil and cook it in a hot oiled skillet, turning it, for a total of 8 minutes until browned.
If you roll the dough too thin, the filling may leak out. Roll it to medium thickness to keep the layers intact. Allergen: contains wheat (gluten).
Katmanlar gerçekten çıtır çıktı, kimyonun kokusu evi sardı, ailem çok beğendi, kesinlikle tekrar yapacağım.
Dana kıyma yerine kuzu kıyma kullandım, yağ oranı yüksek olduğu için katmanlar daha gevrek çıktı; sıvı yağ miktarını bir kaşık azaltmanızı öneririm, aksi halde tava dibi çabuk yanabiliyor.
