Fry the vegetables
15 minFry the potatoes, zucchini and peppers in oil over medium-high heat for 15 minutes, until softened and browned all over.
Kefteji is a hearty Tunisian street-food mash: fried potatoes and zucchini are crushed into a harissa-spiced mixture, then topped with fried eggs. Eaten spread on bread, it makes a quick, spicy meal.
Fry the potatoes, zucchini and peppers in oil over medium-high heat for 15 minutes, until softened and browned all over.
Add the tomatoes and cook for another 5 minutes.
Roughly mash the vegetables with a fork and mix with the harissa, garlic, cumin and salt.
Fry the eggs in a separate frying pan.
Top the vegetable mash with the fried eggs and serve hot.
