Kerebiç is a semolina cookie made for holidays around Mersin and Adana, shaped and filled with pistachios. The white foam spooned over the top is made by boiling and whipping soapwort root, adding a lightly bitter contrast to the sweet. The cookies themselves contain very little sugar; most of the sweetness comes from the foam and filling.

How to make it?

Rub the butter into the semolina

Pour the melted, cooled butter over the semolina, flour, and salt mixture. Rub it in with your fingertips without pressing with your palms, coating every grain of semolina with butter. Stop when the mixture holds its shape when squeezed in your hand.

Bring the dough together

Add the lukewarm milk a little at a time to bring the dough together. Do not knead; just combine the ingredients. Semolina dough gets firmer the more it is kneaded. It is ready when it holds together but is still a little crumbly.

Prepare the filling

Mix the ground pistachios, sugar, and cinnamon. Do not grind the pistachios to a powder; larger pieces retain their texture as they bake.

Fill and shape

Take walnut-sized pieces of dough and flatten them in your palm. Add one 5 ml measure of filling to the center and close the edges around it. Roll each filled piece between your palms, then press gently to shape it like an egg. Makes 16.

Bake

Arrange the cookies with space between them on a parchment-lined baking sheet and bake in an oven preheated to 170°C / 340°F. The tops should not brown; only the bottoms should turn a light sandy color. Kerebiç will dry out if browned. Let them cool completely on the baking sheet; they will crumble if moved while hot.

Whip the soapwort foam

Simmer the soapwort root in 400 ml water over low heat until the liquid is reduced by half, then strain through fine cheesecloth. Add the sugar to the strained liquid and beat with a mixer on high speed. The foam is ready when the tip curls slightly as you lift the whisk. Spoon it over the cooled kerebiç and serve.

Reminder

After boiling the soapwort root, strain the liquid thoroughly and serve the foam in moderate portions. Do not add the root itself, in solid form, to the dough or foam. After the semolina dough has absorbed the butter, let it rest for at least 2 hours or it may fall apart when shaped.

Çöven kökü eskidikçe köpürmesi azalıyor. Suyu yarıya indirip soğuduktan sonra çırpmak en güvenli yol.
