Cover the dough and let it rest at room temperature for 20 minutes.
Mix the chopped walnuts with the sugar and cinnamon.
Pinch off pieces of dough and roll them into rounds. Place some filling in the center, fold to seal, and press gently.
Brush the tops with egg yolk and bake in a preheated 180°C / 355°F oven until golden.
Do not add too much flour while kneading, or the pastries will turn out tough. Contains wheat (gluten), dairy, and tree nuts (walnuts).
