This traditional Thai celebration dessert is made by steaming alternating layers of white and pandan-green batter. Its nine layers reflect the belief that the number nine brings prosperity. Cooking each layer separately takes patience and careful timing; once cooled and sliced, the layers remain distinct.
Whisk the rice flour, tapioca starch, coconut milk, sugar and salt until smooth. Divide the mixture in two and color one half green with the pandan extract.
Grease a square pan and place it in a steamer, then bring the water in the steamer to a boil.
Pour in thin layers of white and green batter alternately, steaming each layer for 8 minutes. Repeat until you have nine layers in total.
Let the cake cool completely before removing it from the pan. If removed while hot, the layers will fall apart.
Slice with a sharp, wet knife. Wet the blade before each cut to prevent the layers from sticking together.
Make sure each layer is fully cooked and set before pouring the next. Partly cooked layers will mix together.
