Khvorost are thinly rolled, cut pastries from Russian cooking. This version cooks them in an air fryer instead of deep-frying them in the traditional way. Light, crisp and dusted with confectioners' sugar, they make an ideal late-night sweet snack.
Whisk the egg, sugar, salt and strained yogurt together. Gradually add the flour to make a firm but pliable dough.
Wrap the dough in plastic wrap and rest for 15 minutes.
Roll the dough out to 2 millimeters thick and cut into strips. Make a slit in the center of each strip and pull one end through it to shape.
Arrange in a greased basket and cook in an air fryer set to 180°C / 355°F for 10 minutes, until golden. If you do not have an air fryer, bake in an oven preheated to 180°C / 355°F for 10–12 minutes.
Sift confectioners' sugar over the lukewarm strips and serve.
Roll the dough as thinly as possible. Thick strips turn hard in the air fryer, while thin strips stay crisp. Allergens: contains wheat (gluten), egg, and milk and dairy products.
