The key to thin stuffed flatbread is a soft dough; dough kneaded as firmly as dumpling dough will not roll out on a griddle. For ground beef stuffed flatbread, the filling must also be cooked ahead: a griddle cooks thin dough in a minute, which is not enough time to cook raw ground beef. Cook the filling in a skillet until it releases and reabsorbs its liquid.

Knead the dough

Knead the flour, salt, yogurt, oil, and lukewarm water for 10 minutes. Unlike dumpling dough, stuffed flatbread dough should be soft; it is right if it feels slightly tacky, so do not add flour to stiffen it. Divide it into four portions and shape them into balls. Cover with a damp towel.

Cook the filling

Finely chop the onion and sauté it in a skillet for 6 minutes. Add the ground beef and cook for another 7 minutes, until it releases and reabsorbs its liquid. Stir in the tomato paste and cook for 1 minute. Remove from the heat, add the spices and finely chopped parsley, then spread the filling on a wide plate to cool.

Roll out the dough balls

On a floured surface, roll each dough ball into a paper-thin circle 40 cm in diameter. Roll from the center outward and turn the dough occasionally; rolling in only one direction makes it oval with thick edges.

Fill and seal

Spread a thin layer of filling over half of the rolled dough, leaving a two-finger-width border around the edge. Fold the other half over the filling and press the edges together with your fingertips. Do not add a thick layer of filling; it can tear the dough and keep the center from cooking through.

Cook on the griddle

Heat a griddle or wide, flat skillet over medium heat. Place the stuffed flatbread on the dry surface. Flip it when the underside has browned in spots; about 2 minutes per side is enough. Brush the top with butter as it cooks, then stack the stuffed flatbread and cover with a towel.

Reminder

Cover the dough with a damp towel and let it rest for 30 minutes. Let the filling cool completely before assembling the stuffed flatbread; these are both inactive resting times. Hot filling steams the dough and can make it tear on the griddle. Stack the cooked stuffed flatbread and cover them with a clean towel so they stay soft in their own steam.
