Kombe is a festive cookie from Hatay, made by pressing dough kneaded with mahleb, fennel, and cinnamon into a carved wooden mold. The mold does more than add a pattern: it compresses the dough, so kombe cookies do not rise and have a dense texture that stays fresh for a long time. Grind all the spices fresh; a premade ground-spice blend will not have the same aroma.

Grind the spices

Freshly grind the mahleb and fennel in a mortar or spice grinder, then combine them with the cinnamon and allspice. Leave the nigella seeds whole. If the ground spices smell sharp when you bring them close to your nose, they are fresh; if the aroma is dull, it will not come through in the cookies.

Knead the dough

Whisk together the melted and cooled butter, oil, sugar, milk, and egg. Add the yeast and spices. Gradually add the flour and knead for 10 minutes, until you have a soft dough that does not stick to your hands. When pressed with a finger, it should slowly spring back. Cover and let rest in a warm place.

Press the dough into the mold

Pinch off walnut-sized pieces of dough, roll them into balls, and flour each one. Flour the inside of the wooden kombe mold and shake off the excess. Place a dough ball in the mold and press it with your palm to fill the pattern. Turn the mold over and tap it firmly once on the counter; the cookie should fall out with its patterned side facing up. If you do not have a mold, flatten the dough by hand and make a pattern with the back of a fork.

Bake the cookies

Arrange the cookies with space between them on a parchment-lined baking sheet. Bake in an oven preheated to 170°C / 340°F for 25 minutes. They are done when the bottoms are golden and the tops are still pale; if the tops darken, the pattern will disappear. Let them rest on the baking sheet for 10 minutes, then transfer to a wire rack. They will crumble if you try to lift them while hot.

Reminder

Cover the kneaded dough and let it rest in a warm place for 1 hour; this time is not included in the recipe’s listed times. Flour the dough before pressing it into the mold, or the pattern may stick and the cookie may tear as it comes out.
