Kool rolletjies are a South African Cape Malay dish of cabbage leaves filled with curry-seasoned ground meat and rice, then quickly cooked in a pressure cooker. The warm aroma of curry powder gives these rolls a distinctive twist on classic cabbage rolls. Pressure cooking softens the rolls without a long simmer.

How to make it?

Blanch the Cabbage Leaves

Boil the cabbage leaves for 2 minutes, until pliable, then drain them in a colander.

Prepare the Filling

Thoroughly mix the ground beef with the onion, curry powder, rice, and salt.

Place one spoonful of filling on each leaf, fold the sides inward, and roll it up tightly.

Cook in the Pressure Cooker

Arrange the rolls snugly in a pressure cooker. Pour the grated tomatoes, olive oil, and water over them, then close the lid and cook after it whistles.

Reminder

Let the pressure release naturally; a quick pressure release may cause the cabbage rolls to fall apart.
