Kousa mahshi is a hearty Syrian dish made by hollowing out zucchini, filling them with ground beef and rice, and simmering them in tomato sauce. It stays flavorful after cooling, so it can be packed to go.

How to make it?

Hollow the Zucchini

Carefully hollow out the medium zucchini with a coring tool, without piercing the skin.

Make the Filling and Stuff

Mix the ground beef with the rinsed rice, grated tomato, and salt. Fill each zucchini about two-thirds full.

Cook in the Sauce

45 min

Arrange the stuffed zucchini in a wide pot. Pour over the water mixed with crushed tomatoes, crushed garlic, and olive oil. Cover and cook over low heat for 45 minutes.

Serve with Mint

Sprinkle the cooked zucchini with dried mint and serve hot.

Reminder

Be careful not to pierce the zucchini skin while hollowing them out; liquid leaking through a hole can thin the filling and cause the stuffed zucchini to fall apart.
