Kulfi is Pakistan’s traditional no-churn ice cream. Whole milk is slowly reduced over low heat for hours, then flavored with cardamom and pistachios. Once frozen in molds, it has a dense, creamy texture.

How to make it?

Bring the milk to a boil

Put the whole milk in a wide saucepan and bring to a boil, then reduce the heat.

Reduce over low heat

70 min

Add the sugar and cook over low heat for 70 minutes, stirring frequently to keep it from sticking, until the milk has reduced to half its original volume and thickened.

Flavor with cardamom and pistachios

5 min

Add the crushed cardamom, chopped pistachios and optional rose water. Cook for another 5 minutes, stirring, then remove from the heat and let it cool until warm.

Pour into molds and freeze

Divide the warm mixture between kulfi molds or small containers and freeze for at least 6 hours.

Reminder

Do not leave the pan unattended while boiling the milk. If it catches on the bottom, the kulfi can develop a burnt smell. Allergens: contains milk and dairy products, and tree nuts (pistachios).

Kalıplara döküp bir gece dondurucuda bekletince kenarları hafif erimeden kesiliyor, kakuleli aroması tam kıvamındaydı, misafirlerim çok beğendi.

Antep fıstığı bulamadığım için tamamen bademle yaptım, dondurunca kıvamı yine de kremamsı kaldı ama fıstığın o yoğun aroması bademde hiç yoktu. Sütü 70 dakika kısık ateşte koyulaştırma adımını atlamayın, kısa keserseniz kulfi buz gibi sertleşiyor.

Haklısınız, fıstığın aroması bu tatlının imzası; yalnız bademle daha yumuşak bir sonuç çıkıyor. 70 dakikalık kısık ateş adımı çoğu kişinin acele ettiği yer, kısa kesilirse kulfi kremamsı değil buzlu çıkıyor.
