Küp griye is a flourless cake from Gaziantep: crushed walnuts are folded into whipped egg whites and baked, giving it a crisp crust and soft center. Since it is not soaked in syrup, it is less sweet than other Antep desserts.

How to make it?

Whip the egg whites

In a clean, dry, grease-free bowl, begin whipping the egg whites with the lemon juice until foamy. Gradually add the granulated sugar and continue beating until stiff peaks form.

Fold in the walnuts

Mix the roughly crushed walnuts with the starch. Gently fold them into the stiff egg whites with a spatula, using a lifting motion.

Fill the pan

Pour the mixture into a pan lined with parchment paper. Level the top with a spatula and tap the pan lightly to release air bubbles.

Bake

25 min

Bake in a preheated 160°C / 320°F oven until the top is golden brown. Then leave it to cool in the oven with the door slightly ajar.

Reminder

When whipping the egg whites, make sure the bowl is completely free of grease, or they will not hold their volume. Allergens: contains eggs and tree nuts (walnuts).

Kalıptan çıkarırken alt kısmı biraz yapıştı ve kırıldı, yağlı kağıdı yeterince geniş kesmemiş olabilir miyim, yoksa kalıbı ayrıca yağlamam mı gerekiyordu, bir türlü tam emin olamadım açıkçası.

Yumurta akını tarifte yazan sertlikte çırpamadım, biraz köpüklü kaldı; oda sıcaklığındaki yumurtayla mı yoksa soğuk yumurtayla mı denemem daha iyi olur acaba, yoksa şekeri mi yanlış zamanda eklemiş olabilirim?

Oda sıcaklığındaki yumurta akı genelde daha hızlı ve sert kabarır, soğuk yumurtayla çırparsanız hacim almakta zorlanabilirsiniz.
