A quick Syrian street food, these small flatbreads are spread thinly with a ground beef mixture flavored with spices and pomegranate molasses, then cooked quickly at high heat. Small enough to fold, they fit easily into a lunchbox.

Step by Step

How to make it?

1

Prepare the filling

6 min

Mix the ground beef with the grated tomato and onion, crushed garlic, hot pepper paste, Turkish red pepper flakes, cumin, pomegranate molasses, parsley, olive oil and salt until evenly combined.

2

Spread over the dough

4 min

Spread the filling in a thin, even layer over the small pieces of flatbread dough.

3

Cook

5 min

Cook for 5 minutes in an oven preheated to 250°C / 480°F or on a hot griddle, until the edges are lightly browned and the filling is cooked. Serve hot.

Reminder

Spread the filling thinly over the dough. A thick layer may not cook through in the short cooking time. If cooking on a griddle, cover with a lid so the steam helps cook the topping. Allergens: contains wheat (gluten).
