This Pakistani cake is flavored with saffron and cardamom, with crushed pistachios sprinkled between layers of batter. Its firm texture holds up well to freezing, and individual slices can be packed in a lunchbox.

How to make it?

Prepare the saffron

Crush the saffron strands in 2 tablespoons (15 ml each) of warm milk and leave for 10 minutes. Once the milk has taken on the saffron's color and aroma, it will be added to the batter as it is.

Mix the batter

25 min

Beat the room-temperature butter with the granulated sugar until light and fluffy. Add the eggs one at a time, followed by the cardamom and salt. Sift the flour with the baking powder and fold into the batter along with the saffron milk.

Layer the pistachio batter and bake

85 min

Pour half the batter into a greased pan and sprinkle over most of the crushed pistachios. Spread the remaining batter on top and scatter over the remaining pistachios. Bake in an oven preheated to 150°C / 300°F until a toothpick comes out clean.

Cool and freeze

20 min

Let the cake rest in its pan for 20 minutes after taking it out of the oven. Once completely cool, you can slice it, wrap each slice separately in plastic wrap and freeze.

Reminder

Crush the saffron in milk and leave it for at least 10 minutes before adding it to the batter, or the color will be dull. Let the cake slices cool completely at room temperature before freezing, otherwise moisture will collect inside the plastic wrap. Allergens: contains wheat (gluten), milk and dairy products, eggs, and tree nuts (pistachios).

Kek kalıpta 20 dakika dinlenmeden dilimlemeye kalktım, ortası biraz dağıldı; bir sonraki seferde tarifte yazdığı gibi tam süresini bekleyeceğim, çünkü aceleye getirmek hiç işe yaramadı.

Safranı sütte beklet meden direkt hamura ekledim, kek fırından çıkınca rengi sarıdan çok soluk kaldı; tarifte yazan 10 dakikalık bekletmeyi atlamamam gerektiğini şimdi anlamış oldum.

Haklısınız, safranın rengini vermesi için o 10 dakika gerekli; sıcak sütte bekletmeden eklerseniz tel haliyle kalıp rengini hamura tam bırakmaz.
