Lazy borek is an easy savory pastry made by layering a pourable, cake-like batter with a filling instead of rolling or buying yufka sheets. The batter is poured with a spoon, forming layers without handling them, and bakes into a distinctive soft texture unlike yufka. Baking powder is essential: since the batter is not fermented, it is the only leavener. Without it, the borek will be flat and rubbery.

Whisk the batter

Whisk together the milk, eggs, oil, and salt. Sift in the flour and baking powder and whisk for 3 minutes, until no lumps remain. The batter should fall from a spoon in a thick ribbon, thicker than crepe batter but looser than cake batter. If it seems too thick, add 50 ml milk.

Prepare the filling

Mash the cheese with a fork and mix it with the finely chopped parsley. If the cheese is very salty, soak it in cold water for 10 minutes, then drain; the batter also contains salt, so the two would add up.

Layer in the pan

Pour one-third of the batter into a greased pan and tilt the pan to spread it. Sprinkle half the cheese filling on top. Repeat this sequence once, then pour the remaining batter over the top. Keep the filling away from the edges; cheese at the edges will darken in the oven.

Add the topping

Sprinkle the sesame seeds and nigella seeds over the surface, then tap the pan lightly once on the counter; this helps the batter settle between the layers of filling.

Bake

Bake in an oven preheated to 180°C / 355°F for 45 minutes. It is done when the top is golden and a knife inserted in the center comes out clean. This borek rises in the oven and settles somewhat after it comes out; that is normal.

Reminder

Let the pan rest for 15 minutes after it comes out of the oven before cutting; this resting time is not included in the recipe time. If cut while hot, the batter in lazy borek will stick to the knife and the layers will blend together.
