Boil the tongue
120 minBoil the beef tongue in water with the bay leaf and onion, then simmer for 2 hours, until tender when pierced with a fork.
This Lebanese mezze is made by boiling and peeling beef tongue, cutting it into cubes, and grilling it over charcoal. It is served with garlic toum sauce on the side. The preparation takes time, but the smoky grilled flavor is worth the effort.
Boil the beef tongue in water with the bay leaf and onion, then simmer for 2 hours, until tender when pierced with a fork.
Peel the tongue while it is hot, then let it cool. Once cool, cut it into thick slices.
Marinate the slices with olive oil, sumac, lemon juice, and salt for 10 minutes, then thread them onto skewers.
Blend the garlic with the cooking oil until thick and smooth to make the toum. Grill the skewers over charcoal for 4 minutes per side, 8 minutes total, and serve with the toum.
After peeling the tongue, let it cool completely before slicing; cutting it while hot can cause the fibers to fall apart.
